While I know the simple answer to this is yes by using different views, The second layout setup ends up starting at pixel # 14,000 (or something like that)
Is there a simpler way to be able change between different setups so that I can work on different projects ?

The simple answer is use different Show directories.
C:\xlights\2019\Christmas
C:\xlights\2019\Halloween
C:\xlights\2019\JoesCrabShack

what is the file extension of the saved layout data?
(so that I can copy it to the separate folders and divide out the pertinent information)

rgbeffects.xml and networks.xml
These are the two files that you need to copy your current set up to a new folder.
The networks file covers everything in the setup tab in xlights.
The rgbeffects file covers everything in the layout tab.

Having a similar issue. Trying to have three totally different setups with the same sequence but it seems, even with different show directories, the models that were last saved are used in the new sequence. Pretty sure I'm missing a setting somewhere. Help would be most appreciated. Thanks.

You can't make a sequence compatible with multiple layouts. You can create a new sequence in one of the other layouts and then import effects from the other sequence.
