I am running the Mac version of xLights. In looking at the documentation and videos, it seems as though the Mac version doesn't align precisely with the Windows version. Most of the documentation and videos seem to be more focused on the Windows version. As somebody that is new to xLights, should I be favoring the Windows version since more resources seem focused on that version or am I just missing something?

The Mac version and Windows version are nearly identical.  It's mostly the documentation that is out of date.   xLights is a very fast moving project with things that change significantly relatively often and the docs do lag.   Also, because of this, many of the videos from more than a few months ago will also be out of date.   Most of the concepts should be similar, but exact screen shots and and such will be different.

In particular, the first tab (used to be called Setup and is likely that in most docs/videos) was completely re-done earlier this year to be controller focused.   Any video from before February likely show the old methods.   Documentation as well.
