Is there some place where I can view an updated tutorial on how Text effect works? I have found this older tutorial

No that effect should be easy to figure out except for the weird countdown formats.

So you don't get any text at all?  You typed text into the box?  You picked a color that works on that model?

NO that is the only tutorial I found & knew there had to be an easier way to do text.

Below are two shots of my setup. I get the tree to turn red but no text.

That’s because the red overwrites the text. You should have the text on top of the red.

I change things around & now the tree will not even turn red.

You seem to be trying to do more than just a simple Text effect.  Why do you need 2 layers?  What do you want it to look like?  You've got the blending mode in that screenshot set to "1 is mask".  Change it back to "Normal" and the Text should show up.

What I want to do is have the word STOP vertical on a red pixel tree. I deleted the red & changed to normal & nothing. Has to be simple I guess I am making way harder then it should be.

Do you have a color set for the text. (with the text effect highlighted on your tree, what color is checked in the color window?)
