I know there's bits and pieces of this question around the forum, but I couldn't find a precise answer to this issue. I have LOR controllers and SanDevices (E682) as part of my show and I'm trying to determine the preferred way to connect and model them. Right now, I had planned to connect the LOR controllers to ports on my E682 controller, setting the port to DMX. I've assigned this port to a universe and am assuming each channel on that universe will be use to animate each channel on the LOR device. Is this the right/preferred way to configure the controllers? I see some threads that seem to suggest I could directly connect my LOR controller to my network in DMX mode and eliminate the need to connect the LOR controller to my E682. Is that an option and, if so, is that the preferred option?

No you cannot connect the LOR controller to an ethernet network that could cause damage.  The LOR controller requires either LOR or DMX protocol so I'd use the E682 to provide the DMX output.  In xLights we used to say we don't need to know anything about the LOR controller its just additional E.131 channels as far as we are concerned but now if you want to use the new controller auto-configure stuff you gotta properly map those channels to the controller definition.  You probably won't find how to do it written on paper and I don't even know how without fumbling around in the program.  You could just jump in Zoom sometime and ask for help sharing your screen.

I've been using 3 LOR controllers and (12) Sandevice for years.  Before I was using a Pi, I would connect the computer (a MAC) and the E68X's to a switch and the LOR's to a USB port on the computer through the LOR USB485 dongle.  I daisy chained the LOR controllers.  The hardest part (not) was to find the USB port that the Dongle was plugged into. Used Xlights to run the show.  Worked perfectly.  controllers and layout were easy.

I've since been using a Pi running FPP ($35).  Same setup, no issues, but it frees up the computer for other stuff.

Scuba,  did you have to do any set up in the FPP on the Pi to make the LOR dongle work off a USB port?
